Spicy roasted garbanzo beans a.k.a. chickpeas. Easy to make.
I soak chickpeas overnight.
Drain and rinse.
Place them in a pot and cover with water.
Bring to a boil...reduce to med-low heat and simmer for 20 minutes.
Drain and rinse.
I absorbed some of the water off them by placing them on paper towels.
Place a tablespoon of olive oil in a bowl, add chickpeas and lightly coat with oil.
I sprayed cooking spray on my jelly roll pan and place chickpeas on it in a single layer.
Add whatever spices you want. (I used sea salt, ground black pepper and a Cajun spice.)
Put pan in a 375 degree oven and bake 30 minutes, turning peas after first 15 minutes.
Yummy!
