Lots of frog legs sauteed with Granny Smith apples

went out to eat yesterday... should have been there ...

I asked this guy ... he looked at me funny shaking his head ...laugh
then asked the person I was with they shook there head and said know ... I hear they taste like chicken lmao

I never really thought there was any certain food that I couldn't do without. Then a few years ago I did a project in South China, remote area and for 2 years I ate the local food.
After a while I would have killed for a good cheesy... pizza. It was the first thing I went for when I landed back in the U.S.

Pizza.. I learned the hard way that I love it Lol

Sweet Pickled Beaver


1 beaver; skinned & cleaned
1/2 cup vinegar
1 tbsp. Salt
2 tsp. soda
2 tbsp. dry mustard
3 tbsp. mixed pickling spice
1 tsp. Cinnamon
1/2 tsp. ground cloves
1/2 cup brown sugar
1/2 cup dry white wine or apple juice
1 cup pineapple juice

Wash beaver thoroughly with salt water, then let soak overnight in enough cold water to cover, adding vinegar and salt to the water.

The next day, remove the beaver from the brine, wash and cover with a solution of soda to 2 quarts of water. Bring to a boil, reduce heat and simmer 10 minutes.

Drain and rinse the beaver, then place it in a clean pot. Add water just to cover. Sprinkle mixed pickling spice on top, bring to a boil, reduce heat and simmer 20 minutes.

Drain and rinse beaver, pat dry and place in a roaster.

Mix mustard, spices, sugar, wine and fruit juices and spread over beaver.

Cover and roast at 325 degrees F. until tender, basting frequently.


Hedgehog Spaghetti Carbonara


500 grams spaghetti
30 ml olive oil
250 grams lean hedgehog
1 medium onion; chopped
125 ml water
60 ml parmesan cheese; grated

Chop hedgehog into small chunks.

Beat eggs and cream together in a bowl. Add half the parmesan cheese.

Put pasta in boiling water.

Put onions and hedgehog chunks in pan with olive oil on medium heat until onions are almost clear.

Add wine and reduce heat.

Drain pasta when cooked, combine it with egg, cream and cheese mix.

Add meat, onions and wine without draining fat and mix thoroughly.

Garnish with remaining parmesan. Serve immediately.


Fred’s Muskrat Recipe


4 muskrats; (fat and glands removed)
1/2 lb bacon
1/2 bunch celery; chopped
4 onions; chopped
1/2 lb oleo
1/2 tsp. cayenne pepper
Salt
pepper
21 oz tomato soup

Saute bacon, celery, onions, oleo and cayenne pepper together for 10 minutes.

Put rats in bottom of a pan, cover tightly. Pour sauteed mixture over the rats, cover with unwatered tomato soup.

Bake, covered, for 2 1/2 hours at 350 F or until done.

Yield: 4 Servings


Pennsylvania Possum Pot Pie


1 5 lb. possum; cut into serving pieces
water
Salt
12 peppercorns
2 ribs celery; chopped
2 carrots; quartered
2 cups flour
4 egg yolks
6 tbsp. hot water

(Often served to unsuspecting bed-and-breakfast tourists in Amish country)

Place possum in kettle. Add water to cover, salt to taste, peppercorns, celery, carrots and onion. Simmer until possum is thoroughly tender, about two hours.

Strain broth and pour into clean kettle. Simmer while preparing remaining ingredients.

Remove possum from bones. Discard bones and skin. Cut possum into bite-size pieces.

Sift flour and one-half teaspoon salt together onto board. Make well in center and put egg yolks into it. Gradually work yolks into flour until stiff dough is formed, adding hot water as needed. Knead until smooth, about five minutes.

Cut dough in half. Roll each half until paper thin. Cut dough into noodles about one inch wide. Add possum to simmering broth. Gradually add noodles.

Continue boiling until noodles are done, about five minutes.


French Fried Skunk


2 skunks; skinned & cleaned
1 tbsp. Salt
water; to cover
2 cups bear fat or lard
2 egg yolks; beaten
3 cups Milk or cream
1 1/2 cups flour
1/2 tsp. Salt
2 tbsp. baking powder

Clean and wash the skunks, making sure that the scent glands are removed.

Cut up into small serving pieces. Place a soup kettle on the stove and add the meat. Cover with cold water and bring to a boil over high heat.

Lower the heat and boil until the meat is tender, about 40 minutes.

Remove all the scum that rises to the surface.

Make a batter by mixing together the egg yolks, milk, flour, salt and baking powder. Mix well until the batter is the consistency cake batter. Heat the bear fat or lard in a deep fryer to about 360 degrees.

Dip skunk pieces in batter then fry until golden brown.

Drain well and serve.
