I have leftover Christmas Ham that I baked for myself.
It was a small bone-in ham done in apple cider.
I really like scallop potatoes.
I just made up a small casserole of Christmas ham in scallop potatoes and it is in the oven now.
Roughly, 3 normal portions, 6 of my portions. Thing is I really like warmed up scallop potatoes. So, even if I don't eat much tonight, I will have plenty I can warm up on other nights.

I had a dill pickle spear earlier.

Scalloped Potatoes with Creamy Sauce

Ingredients:
3 tablespoons butter
3 tablespoons all-purpose flour
2 teaspoons salt
1/4 teaspoon pepper
3 cups milk
6 cups thinly sliced potatoes
Preparation:
In a large saucepan, melt butter over medium-low heat; stir in flour until smooth and bubbly. Stir in salt and pepper. Gradually add milk, stirring until thick and bubbly. Add sliced potatoes to the sauce. Cover and simmer over low heat for 8 minutes.
Transfer mixture to a greased 12x8-inch baking dish. Bake, uncovered, at 375° for 45 minutes, or until potatoes are tender.
Scalloped potatoes serves 6 to 8.

Notice, no melted cheese.
