I'm ready to make my chicken soup for Winter. Who else likes to cook soup?

I get chicken pieces, hopefully on sale. In a large pot with chicken, onion, celery, carrots and a lot of water to boil and turn to a simmer for around 3 hours, to make a stock.

I make huge pots of soup and freeze it by the quart for later.

Love potato soup with chunks of bologna or italian sausage, and lots of garlic.

I can also make one hella good split pea with ham.

I put it in the fridge and the next day I skim the fat off the top. I take chicken off the bones. Add my vegetables that I like and season how I like, and I have soup.

I was brought up on Hungarian food and my favourite soup is bab leves (bean soup).

It's a thick hearty soup and is like a sloppy stew. Perfect with bread and winter days

That sounds nice cat. chicken soup for some reason is one of the best things to eat first when you've had a stomach upset, no one is quite sure why.

Time for a good stew for me.
Big pan, throw in steak chunks, onions carrots, potatoes, swede, peas if desired, salt and loads of pepper. simmer 3 hours.
I think I'll make one tomorrow. :)

I make a lot of stews. I guess you could call stew a type of soup?

Just recently I made a large pot of Hamburger Stew.
I make Beany Bean Stew.
Chicken & Dumplings.
Hot Sausage Stew.
Plus I enjoy many Cajun Gumbos.

Ingredients:
1 pound andouille sausage, cut into 1/4-inch-thick slices
4 skinned bone-in chicken breasts
Vegetable oil
3/4 cup all-purpose flour
1 medium onion, chopped
1/2 green bell pepper, chopped
2 celery ribs, sliced
2 quarts hot water
3 garlic cloves, minced
2 bay leaves
1 tablespoon Worcestershire sauce
2 teaspoons Creole seasoning
1/2 teaspoon dried thyme
1/2 to 1 teaspoon hot sauce
4 green onions, sliced
Filé powder (optional)
Hot cooked rice
Garnish: chopped green onions


Step 1

Cook sausage in a Dutch oven over medium heat, stirring constantly, 5 minutes or until browned. Drain on paper towels, reserving drippings in Dutch oven. Set sausage aside.

Step 2

Cook chicken in reserved drippings in Dutch oven over medium heat 5 minutes or until browned. Remove to paper towels, reserving drippings in Dutch oven. Set chicken aside.

Step 3

Add enough oil to drippings in Dutch oven to measure 1/2 cup. Add flour, and cook over medium heat, stirring constantly, 20 to 25 minutes, or until roux is chocolate colored.

Step 4

Stir in onion, bell pepper, and celery; cook, stirring often, 8 minutes or until tender. Gradually add 2 quarts hot water, and bring mixture to a boil; add chicken, garlic, and next 5 ingredients. Reduce heat to low, and simmer, stirring occasionally, 1 hour. Remove chicken; let cool.

Step 5

Add sausage to gumbo; cook 30 minutes. Stir in green onions; cook for 30 more minutes.

Step 6

Bone chicken, and cut meat into strips; return chicken to gumbo, and simmer 5 minutes. Remove and discard bay leaves.

Step 7

Remove gumbo from heat. Sprinkle with filé powder, if desired. Serve over hot cooked rice. Garnish, if desired.

I use the chicken quarters.
Boiling the chicken with salt, onion, garlic and bullion.
While I'm boning the chicken, I add rice, tomatoes and jalapeno.
When it's near done, I add cilantro and kernel corn.
Great, anti-flu medicine.

I had French Onion Soup in a bread bowl once and loved it.
Has anyone ever tried making soup in a bread bowl?
Was it easy or difficult?
The one I had was served in a restaurant.

I also like creamy mushroom soup.
Bet that would be wonderful in a bread bowl.

Ever seen those bacon cups made by baking bacon on the outside of muffin tins?
A nice bean soup in a bread bowl lined with a bacon cup might be really good too?

Cat, a note on chicken..to cook a whole chicken,
boil the water, put the chicken in, turn off the
heat as soon as it reboils.

Let sit one hour in the heated pot, lidded.
Voila, chicken all cooked perfectly, easily
deboned or shredded and never overdone.

I know this has naught to do with soup but it
took me years to find this easy cook method
when I need just the chicken ;-)

Whenever I make chicken soup, I do it a little different every time. I always like a lot of carrots.
