People can brag about their Mac and Cheese but I gotta cut to the cheese and say that my mac and cheese is the sauce. I do wanna find someone to make new recipes for Mac and Cheese though :joy:

I normally do the Mac and cheese and then crush some zesty tortilla chips and mix ... then throw In the oven to bake till done !!!

I make my own cheese mixture on the stove and mix in the macaroni, then layer into a casserole with extra chunks of sharp cheddar and Mozzarella, then into the oven. It's extra cheesy.

The more different cheeses, the better.... melty layer of cheese on top -bread crumb crust...

mix in some pico de gallo.... nom nom nom

here is something I came up with.
it is also pretty simple. start with the mac.. you just want to soften it a little.
then drain off the water.
add 1 jar of your favorite salsa. and let simmer until the liquid is sucked in to the mac( add a lil water if needed but not so much you need to drain it off)
I then mix in nacho cheese sauce and top with crushed tortilla chips and minced green onions and sliced olives.

Try a white wine cheese sauce, I'd suggest gouda and gruyere for the cheeses. Roux (equal parts flour/butter), milk (or heavy cream if you want a richer sauce), pinch of cayenne, a glass of white wine you'd actually enjoy drinking, and the cheese. A sprinkle of chopped fresh basil and it's good to go. Additions of pancetta/bacon also work well.
