Do you have Favorite Food/Recipe to cook and eat...Can You share the ingredients and the procedure.

My favorite food is lasagne, no recipe and I don't cook it, however my procedure is to locate a single woman who is a good cook, then wiggle my way in to do some long overdue handyman work around her home, then hope she is happy and grateful to the point of invite me to an excellent home cooked meal. aah belly satisfied!

Sometimes simple & easy is better...

Potato Cakes


Ingredients

2 cups chilled mashed potatoes (see Note)
2 tablespoons vegetable oil
2 tablespoons unsalted butter
1/2 cup all-purpose flour, for dredging
1 1/2 teaspoons kosher salt/salt
1/4 teaspoon freshly ground black pepper/pepper


Directions

Divide the mashed potatoes into 8 equal portions. Use your hands to form 1/2-inch thick patties.

Heat the oil with the butter in a large nonstick skillet over medium-high heat until almost smoking. Mix the flour with the salt and pepper in a pie plate. Coat the potato patties in the flour mixture. Add the potato cakes to the pan and reduce the heat to medium-low. Cook until they have formed a golden crust, 15 to 20 minutes. (Peek underneath using a spatula before turning.) Turn and cook the other side until golden brown, about 15 minutes. Season with additional salt and pepper and serve hot.


Note

Make mashed potatoes from the "innards" of the Garlic Roasted Potato Skins by mashing them with 1/2 cup hot milk and 4 tablespoons of softened, unsalted butter. Don't forget to season them with salt and pepper! Chill the mashed potatoes overnight for the best results.



Beat the egg.
Mix the beaten egg with the mashed potatoes.
Stir in the dry ingredients.
Add the milk and mix well.
The batter should be very thick.

Spoon batter into the skillet to form 3" to 3-1/2" inch wide pancakes, about 1/2" thick.
Brown on one side, over medium heat. Turn and brown on the other side.

Koolaid Pie

1 pack of Koolaid
-Mixed Berry
-Cherry
-Fruit Punch
-Berry Blue
-Strawberry
-etc...

1 can of Sweetened Condensed Milk

1 Tub of Whipped Cream

1 Graham Cracker Pie Crust

Mix the koolaid with the condensed milk then mix in the whipped cream.
Pour into pie crust and refridgerate for at least 1 hour.
Top with fresh fruit if desired.

Coleslaw

½ cup mayonnaise
2 tablespoons white sugar
1 ½ tablespoons lemon juice
1 tablespoon vinegar
½ teaspoon ground black pepper
¼ teaspoon salt

Whisk mayonnaise, sugar, lemon juice, vinegar, pepper, and salt together in a bowl until smooth and creamy.

Mix it into the salad of your choice (I use shredded cabbage and carrots)

Scalloped Potatoes

3 tablespoons butter
3 tablespoons all-purpose flour
2 teaspoons salt
1/4 teaspoon pepper
3 cups milk
6 cups thinly sliced potatoes

Preparation:
In a large saucepan, melt butter over medium-low heat; stir in flour until smooth and bubbly. Stir in salt and pepper. Gradually add milk, stirring until thick and bubbly. Add sliced potatoes to the sauce. Cover and simmer over low heat for 8 minutes.
Transfer mixture to a greased 12x8-inch baking dish. Bake, uncovered, at 375° for 45 minutes, or until potatoes are tender.

Apple Crisp

For the crumb topping:

1/2 cup all-purpose flour
1/2 cup old-fashioned rolled oats
1/2 cup light brown sugar
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
dash of salt
1/3 cup unsalted butter ,cut into small pieces

For the Apple filling:

3-4 large Granny Smith apples , peeled and thinly sliced
3 Tablespoon butter , melted
2 Tablespoon all-purpose flour
1 Tablespoon lemon juice
3 Tablespoon milk
1/2 teaspoon vanilla extract
1/4 cup light brown sugar
1/2 teaspoon ground cinnamon
dash of salt

Instructions

Preheat oven to 375 degrees F.

For the topping:

In a medium size bowl combine the crumb topping ingredients with a fork or pastry blender until it resembles small crumbs. Refrigerate while you prepare the apple filling.

For the Apple Filling:

In a small bowl, combine melted butter and flour until well blended. Add lemon juice, milk and vanilla and stir well. Stir in brown sugar, cinnamon, and salt.

Pour butter mixture over apples and toss to coat. Pour apple mixture into an 8x8-inch baking dish and spread into an even layer.

Sprinkle crumb topping evenly over the apples.

Bake for 30-35 minutes or until golden brown and top is set.

Remove from oven and allow to cool for at least 10 minutes before serving.

Variations on a Theme

Bread Crumbs

I usually start with Italian Bread crumbs in a can


To that I add specific spices to 'liven up' the taste.
I prefer low sodium (salt) or no salt spices like Mrs Dash and McCormick.

You can taylor your breading to any flavor you wish, including hot & spicy, Cajun, Caribbean Jerk or any custom combinations your taste buds prefer.

Along with that, you can use different slad dressings to expand the flavor.
Use salad dressing instead of the egg wash.
Try Italian, Zesty Italian, Creamy Italian, Ranch, Ranch With Bacon, Blue Cheese or any other dressing you enjoy.

You can also par-boil some meats in spices and sauces prior to coating them.

When my kids come to visit they always ask for my 'dry wings'
I parboil the wings to pre-cook them a bit in different spices and flavors. tHen I coat them with different sauces and bread them then air fry them crispy.
I do Hot, sweet, crack-peppered, honey and bbq.

My favorite way to eat chicken is to air fry it breaded and spiced then chilled out in the fridge.
I freaking LOVE cold chicken and I can eat it as it is or tear it apart to make sammiches or for topping salads.

Recently I bought some sweet onion dressing and I tried it on some pork ribs which turned out fantastic. Next I'm gunna try doing some chicken.

I also add dressings to meat casseroles and roasts.

A great pasta dish that I made years ago from stuff I had in the house and put together . And it’s stated a favourite ever since , my kids love it .

Twirly pasta (can’t remember the and off it )
Lardons
Chorizo
Mushrooms
Mozzarella balls
Tomatoes
Cheese sauce


Cook the pasta
In another Ian cook the mushrooms for a bit , then add the lardons and cook the add the chorizo .
When the pasta is cooked , drain and add to it the mushrooms lardons and chorizo . Stir it all in . The add a bit of mozzarella to it , and stir in til the mosaics getting all stringy , and add the cheese sauce .
Slice up all the tomatoes .
Transfer the pasta mix to an ovenproof dish or pan . Cover the top on the sliced tomatoes and pill of mozzarella bits and add it all over the tomatoes .
Put in oven and cook for about 30 minutes or until the top is nice and crispy .
Or you can put it on love and just leave it in there until you want it .
Serve with garlic bread .

More Simple Easy Grub

Homemade Breakfast Burrito

Cut up some ham or your favorite sammich meat.

Scramble up some eggs adding the sammich meat as it cooks.

Microwave a tortilla for about 30 secs with a damp paper towel

Lay the eggs/meat in the tortilla and top with cheese

Roll the burrito tight.

Microwave again for appx 30 secs.

Homemade Breakfast Quickstarter

For each sammich:

Cook 1 egg, breaking the yoke but not scrambling - fold it to the size of an English muffin.

Toast the muffins and coat both slices with mayo.

Lay the egg on the bottom half of the muffin.

Fold a piece of sammich ham and place on top of the egg.

Top that with a piece of sammich cheese and place the top slice of the muffin on it and press it down.

Microwave for appx 30 secs.
Be careful the cheese will be hot.

Duplicate for as many sammiches as you need.

eggs pastrami, bacon hamburger (what ever)
green onions minced
diced tomatoe
cheese and an empty small soup can with both ends cut out and washed.
(only things really needed is the eggs and the biscuits and the can)
oil pan as you wish(I like butter)
put can in pan up right
set medium heat crack the egg into can add other toppings (chopped)in to can. and cover.
place Biscet halves in toaster about 10 min.
remove can. use spatula to place egg on toasted biscuits add a slice of cheese, and cover with the other half. tha can makes a form to perfectly fit theeggto the biscuits. just like the big chains only better.
